The majority of travellers' decision-making when choosing a destination is heavily influenced by food. After all, delicious food allows travellers to experience the local culture and provides knowledge of the historical impacts on a location. When making vacation arrangements, keep in mind this list of 10 amazing locations, all of which have recently opened wonderful restaurants and eating options that provide authentic cultural experiences.

Glasgow

Although Edinburgh is frequently preferred by first-time visitors to Scotland, Glasgow also has a burgeoning culinary scene that matches that of its neighbour to the east. Glasgow has 16 Michelin-starred eateries, including Crail Bruich in the West End, whose seasonal British ingredients earned the restaurant a star in 2021, earning head chef Lorna McNee the only female chef in the nation to hold this honour.

Of course, you can anticipate a lot of seafood-forward meals here given the city's closeness to the River Clyde. Small plates meet sustainable seafood at Kelp, which recently debuted in Glasgow's Cowcaddens district in March 2022. On the menu are dishes like hand-dived Barra scallop ceviche and whisky and treacle cured salmon. Another popular restaurant in the area is Crabshakk, where you can have freshly caught lobster, grilled scallops, and oysters on ice. And if you want to venture outside of the norm, visit 111 by Modou, where Senegalese owner Modou Diagne began his career in 2014 as a kitchen porter, to partake in a themed six- or 10-course tasting menu. — Associate Editor Elizabeth Preske

Toronto

Toronto's culinary scene is as diverse as the city itself, making it one of the most ethnically diverse cities in the world. The city has received its first MICHELIN Guide, with 74 restaurants and 27 different cuisine types being featured, solidifying its place as one of the must-visit culinary destinations in North America.

The astounding diversity of Toronto is a key component of its gastronomic experience. Since 53% of Toronto residents were born abroad, there are international influences on every menu in the city, from the Egyptian brunch at Maha's in Leslieville to the Northern Thai delicacies at PAI in Downtown Toronto and the comforting Caribbean staples at Chubby's Jamaican Kitchen.

A playground for young, aspiring chefs eager to incorporate regional delicacies in their Toronto kitchens, the city is well situated close to three distinctive wine-growing areas of Ontario and acres of fertile agricultural terrain. Your taste buds will appreciate your trip up north now more than ever.

Singapore

Foodies will be especially spoilt if they travel to Singapore in 2023. For years, it has been the only country in Southeast Asia with a restaurant with three Michelin stars, and you can enjoy Michelin-starred meals at a food hawker stall. A total of 67 restaurants received a Bib Gourmand recommendation for 2022, and the tiny nation now has 52 Michelin-starred restaurants, seven of which won their first star in 2022. A few exciting new restaurants are Euphoria by Singaporean chef Jason Tan, where you can try his invention, gastro-botanica 2.0; NAE:UM, a Korean concept presenting creative cuisine; and Marguerite, where the seasonal tasting menus wonderfully fit the lush garden surrounds.

There are a few cutting-edge new restaurants that vegans might explore as well. The first of its type in Singapore, Analogue is a plant-based restaurant with an emphasis on sustainability. The creator of Native and Analogue, Vijay Mudliar, intended both the menu and the restaurant's atmosphere to draw attention to sustainable food practises. The tables, which are constructed of mycelium, a sort of fungus, and the centrepiece countertop, which was 3D printed using 3,500 pounds of recycled plastic, are placed in a renovated chapel. The first plant-based butcher shop in the nation, Love Handle, debuted in 2022. Beverly Hills, California

Hoity-toity Since the debut of Spago in 1982, Beverly Hills may not be a name you've associated with trendy cuisine. However, this small section of Los Angeles has one of the highest densities of Michelin stars in the region, and if the openings in 2022 are any indication, there will be much more on the way.

The Hideaway, an upscale Mexican steakhouse with dishes like a 36-hour brisket birria finished tableside, opened in the Rodeo Collection neighbourhood just last month. Later this fall, Marc Rose and Med Abrous will reopen La Dolce Vita, a red sauce restaurant from the 1960s once frequented by Sinatra and others. Daniel Boulud, a legendary chef of French cuisine, will also launch his first restaurant on the West Coast at the Mandarin Oriental Residences later this year with the assistance of Studio Ange's design team.

To dispel any notion that the city is solely populated by celebrities, the recently launched Ella promotes community by removing its corkage cost for patrons who share a glass with a complete stranger. Ella is a laid-back all-day restaurant with a buzzy natural wine list.

Wilmington, North Carolina

Wilmington might not be the first city that comes to mind when you think of the top vacation spots for foodies. However, the beachfront community on the coast of Carolina is presently experiencing a dining revolution and is establishing itself as a culinary hotspot. It would be a crime to miss out on any of these delectable dishes, especially with award-winning restaurants and chefs garnering praise and the attention of the national food scene.

Visit Catch for fresh seafood, where Keith Rhodes, a James Beard finalist and Bravo TV "Top Chef," will cook your lunch. Vegans will adore The Green House, which employs organically grown fresh veggies, and Dreamer's Welcome Inn, a bed and breakfast that is totally vegan. True Blue Butcher and Barrel is a restaurant, whisky bar, and butcher shop all rolled into one for a more premium dining experience and superb whisky.

Whatever your location, Wilmington's dining scene has plenty to offer everyone, and the food seems to be getting better over time.

Fort Collins, Colorado

A mid-sized Colorado city might be most known for its easy access to outdoors, but in Fort Collins, trying the local cuisine is one of the most popular things to do. You can't go wrong visiting well-known faves like New Belgium Brewing Co. and Harbinger Coffee, but you'd also be wise to try some of the newest restaurants and bars in Fort Collins. A healthy assortment of tacos are offered at Los Muertos Urban Kitchen & Cantina, which honours the spirit of Da de Los Muertos, with fillings such al pastor (boneless pork shoulder, pineapple salsa, avocado mousse) and Xochimilco (sautéed, hibiscus, black bean purée, and cheddar). You may get Jersey-style subs, including the traditional pig roll sandwich, at Jersey Cowboy, a moving food cart you have to "capture."

Additionally, as the city is home to more than 20 breweries, a visit to one or two of them should be on your schedule since it is Colorado's Craft Beer Capital. Grab a drink at Mythmaker Brewing, the newest addition to the Napa Valley of beer, or Odell Brewing Co., one of the most well-known breweries in the state. dislike beer or ale? The Hillside Vineyard and Blanchard Family Wines branches of The Exchange, a cluster of eateries, stores, and other local businesses housed in shipping containers, have recently welcomed new Blendings.

Cincinnati, Ohio

Cincinnati's devoted sports fans may be its claim to fame, but the city's food scene is ready for the spotlight. One of the city's most picturesque areas, Over-the-Rhine, which is well-liked by locals for its historic architecture and youthful, creative spirit, is where the culinary activity is concentrated. With the help of that enthusiasm, the neighbourhood was swiftly turned into a gastronomic haven, with Findlay Market as its focal point. This 19th-century food hall is home to a number of well-known businesses, including the Jamaican restaurant Flavors of the Isle and the Black-owned bakery Maya's Bakes.

With the addition of new vendors to establish roots alongside the tantalising Japanese yakitori at Rokaru Ramen, the genuine Puerto Rican mofongo at MashRoots, and the award-winning barbecue at Four Mile Pig, the opening of Element Eatery in the city's Madisonville neighbourhood this month promises to add yet another exciting food hall to the mix. The Alara experience dining concept, which focuses on shared plates and is set to open early next year, will move close to the new food hall. There is no doubt that further experimentation will be blooming in this city in 2023 as a new generation of chefs continue to return from stays in places like New York and San Francisco.

Phoenix, Arizona

The most anticipated restaurants in Phoenix, Arizona, are coming to some of the most interesting new resorts. Sam Fox, the creator of Culinary Dropout and Flower Child, will lead The Global Ambassador, a 141-room luxury resort, when it debuts in 2023. With five on-site restaurants, including a high-end Parisian steakhouse and an 18,000 square foot Mediterranean restaurant, dining will therefore be a major priority. The VAI Resort will debut the following year as well, and with 13 additional dining options, it is anticipated to be the state's largest resort.

However, Phoenix already has many top-notch eateries that attract foodies. Beginning in 2022, Cala Scottsdale, owned by celebrity chef Beau Macmillan of the Food Network, will serve excellent dishes paired with regional wines. Look no further than Ta Carmen, run by former "Top Chef" contestant Angelo Sosa, for a modern interpretation of Southwestern food. The quaint eatery uses goods from nearby farmers in addition to indigenous American delicacies.

Duluth, Minnesota

Duluth, Minnesota, is the place to go if you're seeking for the ideal spot to grab a cold one and eat a classic dinner. This small village on the coast of Lake Superior offers delicious cuisine with a picturesque setting thanks to the ten breweries and cideries in the vicinity as well as superb new and old eateries.

The beers and ciders created here are so good because to the Lake Superior water that they are celebrated annually. Brewers from more than 100 breweries all around the state congregate for the annual All Pints North celebration, which takes place at Bayfront Festival Park. Lake Superior Brewing Co., which has a brewery, kitchen, and bar, is a newcomer to the beer scene.

The Pickwick Restaurant and Pub, which is more than a century old (and is styled as such), offers a full menu with big dishes like steak and barbeque as well as some smaller snacks and pub food for those who have overindulged in the beer scene. For those seeking more contemporary nibbles, The Duluth Grill, a Food Network favourite, offers a variety of Instagrammable dishes with influences from both Korean and Mexican cuisine.

Grenada

Grenada, which has been dubbed the first culinary capital of the world, is awash in a variety of spices and ingredients that are undoubtedly already in your pantry. The food is among the tastiest in the area since nutmeg, allspice, chocolate, clove, cinnamon, ginger, turmeric, and bay leaves all grow in plenty on this idyllic island.

Try the national cuisine, "oil down," which is a substantial stew made with spices, of course, veggies, and meat that is cooked slowly in a coconut milk broth that has been spiced with turmeric and ginger. In a classic oil down, you might find items like salted fish, breadfruit, pumpkin, chicken wings, and spinach.

Visit Friday's Restaurant & Bar or beachside BB's Crabback for a more traditional ambiance. Both restaurants are well-known for their fish burgers and breathtaking bay views. While this is going on, modern eateries like Asiatique at Silversands and Rhodes at Calabash combine fresh ingredients and cooking methods with the island's plethora of regional flavours.Grenada, which has been dubbed the first culinary capital of the world, is awash in a variety of spices and ingredients that are undoubtedly already in your pantry.
